Turkey Brine is ideal when cooking turkey or chicken. Use this brine when marinating poultry overnight in the refrigerator. Add about 16 oz. of Brine to 4-5 lbs. of poultry in a resealable plastic bag or airtight container. Refrigerate for 6 hours to overnight--the length of time will depend on how much moisture you like in your bird. Remove the turkey or chicken from the bag 30 minutes prior to cooking. A brine typically has three things in it, salt, sugar and water. The purpose of brining is to add flavor to the meat through osmosis. Brining makes the meat extra juicy, flavorful and succulent. Spices Too! Brines can be used on all poultry including chicken, game hens, turkeys, Cornish hens etc.

This blend of herbs, spices, sugar and salt goes well with a whole garlic clove, apple or citrus that you can add to the brine. Be sure to season your poultry as usual after brining before cooking, using half the salt as normal.
